    whole milk qualifies as the least-processed kind—and besides, it’s also the most delicious.

    It sure is. I've been making kefir and yogurt and I'm definitely using whole milk.

      How do you make kefir and yogurt? Do you have recipes or instructions you could share? I'm curious about it.

        I use a yogurt machine to keep it at the proper temperature. But you don't have to do that and some people make it in a crock pot. In the case of both of these, you need a starter. I also use whole pasteurized milk. It's way cheaper to make your own,than to buy them in the grocery, although you can get full fat plain yogurt in the grocery. You can buy kefir grains in little packets or a large lump of it at places like Amazon.com

          I didn't even know there was such a thing as a yogurt machine. I've always been a bit intimidated by the idea of making yogurt, but I eat it nearly every day for breakfast, so it would be a useful thing to know. Thanks so much for sharing! :)
