So while this is interesting, I'm a bit confused as to how she's laid this out. When were the products acquired? All on January 1 and used up or not by the end of the month for the photo?

Naturally, the foil sample packets are going to be one or two uses, and then they'll be empty. That's a bit misleading, I think. Sample products vs full size products have some bias as to how long they last.

There are definitely some go-to products that I enjoy and will continue to buy the biggest containers of because I know that a) it's worth the price and b) I use whatever amount of that product on a regular schedule. My body lotion, for example, is something that I rarely change, but that I'm willing to pay the $9 or $10 for the largest bottle, because I know I use it every day and enjoy it. It's much harder to gauge with makeup and other beauty products though, especially when you go out on a limb and try something. Eye shadows are something that sit around in my drawer for years sometimes because I just don't use single pots that often. The cost here is definitely something to think about either way.
