I'm going to ask a silly question -- I've never held a ceramic knife -- are they lighter feeling? You know how a knife has a feel and weight and balance thing going on, how do ceramic knives compare?
I personally like heavy steel knives. Zwilling JA Henckels are my favorite and a heavy duty Chinese cleaver for the reasons you stated, balance and weight. There is nothing better than the feel of a well balanced knife. My wife likes the ceramics. You can sharpen them and they do cut well, but they can be light.
That's what I was thinking. I've never used a ceramic knife but adore my Japanese ones. But... I rather like knives in general so probably best not to get me started. (I'm trying to justify 400US for a pocket knife, other than I want it!)

You have expensive tastes...Sebenza, Reeve, Glock, Gerber....what are you looking at?
