What's It Like To Become A Certified Tea Sommelier?
Tea is a huge growth industry in the United States. Despite our coffee-culture reputation, tea has steadily been increasing in popularity for decades, and this year the industry is estimated to break the $11 billion mark. (And, Mississippi, of all places, became home to its first tea farm.) High-end tea, in particular, is becoming an obsession in the food world, with restaurants like New York City's three-Michelin-star Eleven Madison Park boasting a full tea pairing with its food.

Tea Processing Chart
Tea processing is the most important quantifier when determining or producing a tea type. Green tea, yellow tea, white tea, oolong tea, black tea and post-fermented teas all begin as fresh camellia sinensis leaves and go through different processing steps. While there are an infinite number of variations that result in an infinite number of tea styles, the same underlying processing methodologies largely define the tea’s type.

Yaupon tea, I finally gave it a go!
I saw this tea discussed here and I went ahead and got some from catspringtea.com. I have to say,it's quite delightful. I got the black tea and it makes a very fine drink indeed. It's a bit different than your standard tea,but well worth drinking. For a little fun, today I mixed it with some Scottish Morn. The flavor bouquet is just delightful! The possibilities are endless with this one. Be sure and don't let the scientific name scare you off. The picture I selected can't be posted.

The Futuristic Arnold Palmer Cocktail
My dad wasn't much of a drinker. He drank coffee in the morning, and water during the day. But I could imagine him enjoying an Arnold Palmer - a combination of tea and lemon juice - at a party or barbecue. He was also very interested in science, so I think he would have been amused by a blue tea that would turn colors with the addition of lemon juice. It's a futuristic cocktail that certainly didn't exist during Dad's lifetime, but I think he'd approve.
