Having our own network would be amazing but obviously would take a lot more time, effort and money. Now i think it would be easier to just join a pre-existing network with out own channel. Which do you think would be the best to create the channel on?

I'm afraid I can't provide you with much guidance on this topic. As far as I'm aware, EFNet & UnderNet seem to be the big networks, however both offer some difficulty in establishing the channel initially (see UnderNet's AUP & EFNet's ChanFix, both seem to enforce some sort of activity before enforcement becomes possible).
Reading through the EFNet documentation however, I stumbled upon DALnet, which seems to have tools for channel management per this quote:
DALnet pioneered nickname and channel registration, giving users the right and ability to govern their online experience, without the fear of channel takeover, impersonation or harassment.
However I failed to find the documentation on this issue, but maybe their docs or some googling is a good place to look next?

I believe that's what DALnet's ChanServ is about. It's basically a bot/service operated by the network that allows you to register a channel & moderate it (see DALnet Policies & Procedures).
