Personally I recommend people begin with Carl Sagan's old book The Demon-Haunted World: Science as a Candle in the Dark as it doesn't attack religion specifically but examines why we're so unskeptical and what we can do about it.
Sagan, of course. I've always admired him, as well as his work with Cosmos.
