    I'm a huge fan of making home made pickles in brine. I have a killer recipe for making pickles that you eat about 2-3 days after you make em, and that is the time they taste the best as the recipe is designed to be eaten fresh and should generally not sit for longer than a week unless you properly seal them for longtime "pickling" which is also obviously an option.
