We use a lot of "back yard weeds" that are generally common during the spring and summer months to pickle our vegetables. Pickled cucumbers, wild mushrooms, cabbage, green tomatoe mix and so on. These make for some amazing addons when making food during the winter. When I grew up in Europe, back in the day we weren't so lucky to have fresh veggies/fruit all year round so these pickled goods made all the difference.
