I do the exact same thing, however I also change it up by using deer meat, salmon and at times lamb. My dog has a severe allergy to chicken so thats off the menu. He's never been happier and I always welcome new recipes that allow me to feed the big guy. His coat and happiness level is at maximum now that he eats better.
Yep, tons of different veggies. Carrots, potatoes, celery, peas are the go to, however I sometimes throw in other stuff. I also cut a boiled egg in his meal sometimes to boost his fat intake. Generally I do same type of stew/rice dishes as you do and freeze them, I noticed it really is the most efficient way to spend a day prepping for a month of meals.
