How to make the perfect Mexican Style Omelette ..
Ahh the omelette, one of the best things you can make with your dozen eggs. This is a fantastic mexican style recipe on a very delicious and mouth watering egg dish.
The perfect mexican style omelette!
Alright, before we get right into the step by step portion I would like to go over what tools you will need to pull this one off without a hitch!
You will need the following cooking items:
- 5-6 Small Glass or Plastic Bowls to store your diced ingridients in (I will list the ingridients to put into these later)
- a sharp cutting knife or cleaver
- a spachula, plastic based so it doesnt melt on the hot pan
- large frying pan (preferably non stick)
- table spoon
You will need to prepare the following ingridients:
- diced tomato
- diced orange/red/green peppers best to mix it all in
- diced onion
- diced or grated cheese (any kind you like)
- diced ham or bacon (really up you)
- diced pickled jalapeno
- a medium sized bowl with 8-12 eggs cracked into it, mixed with a fork until one smooth texture, peppered and salted to your taste
- virgin olive oil
- fresh basil leaves
- sliced tomatoes
Now that you have everything prepared, I will put the step by step directions just below in a LIST format.

Below are the step by step instructions on how to make one of the best tasting omelettes around!

Preperation
In order to prepare all of your ingredients for quick omelette making efficiency, its best to dice all of your ingredients beforehand so that after all you need to do is to throw them onto the frying pan.

Heat up frying pan
Pour about 2 teaspoons of olive oil as the pan is heating up, be sure to have a pan with a lid (or use a lid from another pot as long as it fits)

Fry up your ingredients
Depending on who you are cooking an omelette for, chances are they might not like all of the ingredients. So select the appropriate ingredients and throw them all onto the pan, making sure to AVOID putting in the cheese in at this point in time. Be sure to cook everything for about a minute or so on medium heat until you are happy with the texture.

Pour in the egg mix
Once you are happy with the way the initial ingredients are cooked you can move them all to one corner of the pan, making sure to use the spatula in order to take up as little room as possible. Now you have space to pour in the egg mix, you want to pour about 2-3 eggs worth depending on the size you wish to make the omelette.

General Cooking Process
Once your egg mix has been poured onto the pan, give it about 30 sec to cook from the bottom. At this point you want to use your spatula to move the ingredients onto the top of your egg mix which should be getting a bit more cooked at the bottom. Spread these ingredients across the whole egg mix and wait until the bottom of the egg mix has hardened up enough to be flipped.
At this point in time, you want to scatter the diced or grated cheese over the exposed uncooked portion of the omelette. Be sure not to get any on the pan itself as it will melt and then burn if the cheese touches the pan surface.
You have two choices here, you can fold the egg mix in half to make a perfect fold or you can fold the mix from multiple sides in order to make it look more round. Once folded you will need to flip the omelette upside down and then cover it with your lid. Wait about 1-1.5 minutes depending on how well you would like the egg done, people that like it more fluffy and soft wait less.

Plating / Preperation
Once you have the omelette at a nice golden color it is time to slide it off the pan and on to the plate. The whole cooking process for 1 omelette should have been between 5-6 minutes.
Lay the omelette in the middle of the plate on top of 2 sliced tomatoes and then garnish it with a couple of fresh basil leaves.
Apply some salt and pepper if none went into the egg mix and serve with a slice of toast.
