IMO any respectable club sandwich does not use deli meat.

What kind of meat would you suggest? Isn't deli meat just a term for sliced sandwich meat?

I know what he's saying, and I added a related link that I think you might find interesting. "let’s define processed meat. The term typically refers to meats (usually red meats) preserved by smoking, curing, salting or adding preservatives. Ham, bacon, pastrami, salami and bologna are processed meats. So are sausages, hot dogs, bratwursts and frankfurters. Few studies have defined processed meat to include turkey and chicken slices." Deli meats are usually full of nitrate, sodium and preservatives. I think Crozon means to use fresh shaved meat that has literally been cooked before you so you know what's in and can control the health aspect of it.

The best type of sandwich meat is the one you prepare yourself. Buy your favorite chunk of meat, spice it up, marinate for 3 days and place it in the oven for 4 hours. There ya go.
