    In Europe dishes, like pickled herring, beat salad / soup, chicken or pork gelatin dishes topped with a sprinkle of lemon / white vinegar are very popular and quite tasty when prepared and served correctly.

    The reason why I defend these dishes is because a lot of people have no clue on how to prepare them, and most of the time the recipes in magazines are misguided and sad. There is a fantastic assortment of different cultures in this world, and each has their own style of cooking. Some foods stick in American culture and others don't. A perfect example is Sushi and Pho soup... which have had an amazing run the past 20-30 years. It all depends on being open to new foods while growing up, and being thoughtful enough to let that food be represented by the people that have been cooking it for generations and not by some blogger trying to make a couple of bucks.
