This years pigs versus last years pigs

Just looking out over the back pig pen as I work and reminiscing about last years pigs.

  • A little overweight

    This years trio are already a little overweight. I mucked up the dates we bought them so I measured them at about 70kg (154 lbs) a few weeks ago - a bit heavy

    Now just waiting for the mobile butcher to make a time and prepping the project plan for the break down while sourcing the sausage skins and spices.

    It's always a bitter sweet moment (especially for my wife) but I am getting excited!

    No haggis this year, we didn't make the best use of it, we will do sausage, brawn, some pate, bacon, roasts and chops and some salami. Least years salami and prosciutto was not that successful so I will do a smaller batch this year.
