IMO minions are popular because they aren't specific to anything. They don't talk, they only do what gru told them to, and they're otherwise not really anything as characters. That makes it hard to find a reason to dislike them. You can't disagree with their motives, they have none. You can't disagree with their actions, they're not doing anything other than what gru told them to. You can't hate how they talk, they don't talk. What you have is a dish of ice cream, it tastes like sugar, and not much else, there's no complexity, so there's nothing to complain about.
It's really funny you say that, because at the bottom of this post was a link to this post about multiple people who think the Happy Meal caveman minion was "using off-colour language".
And they are adorable. It's hard to hate something that adorable.
