Reubens are something like a hobby for me, bordering on an obsession. I make them all the time, in different ways and with different brands of corned beef/swiss/kraut/dressing, looking for the the ultimate iteration, yet knowing it doesn't really exist. If a restaurant has one on the menu (none of that 'turkey and slaw' BS, thankyouverymuch), I order it and sometimes judge the whole joint on its ability to make a decent reuben. It is the Emperor of between-two-slices sandwiches, IMO.
I have seen that in a few places back east and in Pittsburgh as well. I've seen "reuben w/ choice of corned beef or pastrami" a lot too. I've actually tried it and it's not too bad, but it's a long way from a reuben - and I like pastrami. Always reminds me of the Mitch Hedberg joke about turkey-based substitutes for ham/bologna/pastrami - "Man, be yourself! You've got your own thing goin'! People like you!"
It depends: this past months, ciabatta bread, spread tomato on both sides, add a bit of coarse salt. Open a can of tuna on a bowl, add either Dijonnaise, or a spoon of mustard and a spoon of mayo, mix it and spread over the bread. Add Ruccula.
Another favorite is smoked turkey breast with cheese.
And another I am going to try Saturday as figs are maturing right now, is this one
To those that don't know it, open-faced Swedish dish with shrimp, eggs, leafy vegetables, and I think some kind of vinaigrette... all piled on top of thick bread covered in mayo. Had one while I was in Stockholm... been craving one ever since. So damn good!
I don't enjoy bread but I cannot say no to a bagel with cream cheese, wads of pastrami and dill pickles (either slice or relish style i'm not too fussed)
or Tiger bread toasted and then two perfectly yolky runny poached eggs salt and pepper. doesn't need anything else, bitches.
edit: Also a shout out to the "Triple fried egg chilli chutney sandwich" which is the only real way to start the day after an epic binge drinking night.

BLT on a toasted English muffin.
Thick stack of turkey deli meat, finely chopped lettuce, cheese on white bread with a bit of mayo and mustard. It's been my favorite since school.
A good Italian sub with only meat and cheese, lightly toasted and dipped in a tomato basil soup.
Pulled pork or beef brisket topped with coleslaw and lots of hot sauce on a kaiser roll.
It's a toss up for me between a classic bacon, fried egg and cheese on a toasted bagel or peanut butter and honey on a toasted english muffin.
