I'm a big fan of Aahz and Skeeve from Robert Asprin's MythAdventures, a comedic series that owes its commercial success to Discworld.
Skeeve is a shy and reluctant (very) amateur wizard, and Aahz is a bold and bawdy demon who has lost all his magical powers, and must make due training Skeeve in hopes of ever making it back to his home dimension.
Come to think of it, their whole dynamic is a LOT like Rick and Morty, right down to hopping from dimension to dimension and getting in all sorts of comedic trouble. Replace "mad science" with "magic" and "Grandpa" with "Demon" and you've got MythAdventures. :)
