Is there a way of viewing posts by people you're not following?
Or just a list of people you're not following?
How else can you find interesting people to follow?

Something others in the community have suggested which I think works well: Visit tribes with a lot of activity, or that are about a subject you're interested in. Check out the "Top Tribe Members List" in the sidebar, and follow the users in that list that interest you or that have high vote scores. They may not have the exact same interests as you, but those people are usually really active and/or well known for their quality content.
Also, if you have an idea of what type of content you want to see, then the search bar is your friend! I've found a few neat tribes without trying just through typing in some keywords.
Go to your home feed and select the TRIBES FEED.
Some other info you may find worthwhile: http://snapzu.com/teamsnapzu/faq-snapzu-basics (part 5)
That shows tribes I'm following but not ones I'm not.
Just like with users, I wonder if there are interesting tribes I don't see because I'm not following them.
The only solution to both I've found is to view the home page. I just thought there may be a way of viewing only users or tribes I'm not following.
There's always /list/trending and /list/new... Although it's not super effective.
Edit : fixed links.
I use the main magazine view. When you go to snapzu.com, there's an option for list or mag. The mag view shows all the top post by everyone. Once I start to recognize someone whose posts I click from time to time, I follow them.
