For me it's a pretty obscure one, but Paladin's Quest on Super Nintendo ranks pretty high on my list.
It's an obscure Enix RPG with a weird combat system. Basically, there's no MP, and spells drain your health. The quirks make it challenging, but also unique, and the graphics had a distinctive pastel color look.
The closest game I can compare it to is probably Phantasy Star, but even that's not quite right.
For one reason or another, I just never got around to winning that sucker, and it haunts me to this very day. :D
