My guess is, if you're not Latin American, there are some mysterious things in this film (such as the reference to El Chapulin Colorado), but it is really funny. In a dark sort of way. If you don't know it, "mamón" is the Spanish word for "cocksucker" in many countries, including Mexico.
It's a fighting rooster. Not sure if there's any deeper meaning, I just took it as one more standard Latin American reference (such as the lucha mask). You also have the "Miss Universe" reference to Alicia Machado, the Santa Muerte reference when the Mariachi singer dies, and Trump's hair turning into a cockroach and leaving the room at the tune of "La Cucaracha". Some of this are more obvious than others.
