1. Dal Bati Churma - This is one dish that every Rajasthani feels proud of and is almost s staple diet. Rather one should say that the person who has ever watched news in hindi Rajasthan, must have gone through the recipe of this dish on tv.
This dish consists of three main servings, namely-Dal (lentil), Bati (baked wheat balls) and Choorma (sweet cereal powder). The preparation of this dish takes longer time compared to other Rajasthani dishes as three components are to be served and all these three are prepared separately.
It is the most loved Rajasthani cuisine of all. The traditional way of serving it includes addition of ghee over the top of coarsely mash baati, which is then eaten with dal. It is a typical rajasthani dish.
2. Mirchi Vada - According to a survey conducted by Live TV Rajasthan, this dish is loved by a large number of people all over the nation, more so by Rajasthanis. The main ingredients of this dish are Mirchi (Chilli), potato and gram flour.
A green chili is stuffed with potato and masala and is deep fried with gram flour over it. It is usually served with either mint and tamarind chutney or a tomato sauce.
3. Pyaz ki Kachori - It is a spicy dish which originated in the Jodhpur region of Rajasthan. It is one of those spicy snacks which could make the foodies go mad for it. The popularity of the dish is such that it can now be found in many parts of North India other than Rajasthan. According to local news in Jaipur, it could easily be found in almost every area of the city.
4. Moong Dal Halwa - If you are done with spicy dishes then Moong Dal is a dish to go for. It is a sweet dish made from dal or lentils which is sweetened using milk and sugar. It is usually eaten during winters, as it is supposed to keep the body warm. The halwa has got a great importance for the people of Rajasthan as they prepare it during auspicious occasions of Holi and Diwali.
5. Kalakand - The other name for Kalakand is Mishri Mawa. It is also a sweet dish which is made from solidified, sweetened milk and cottage cheese. Rajasthan's Alwar city is famous for it. Alwar's Kalakand or Milk Cake has given it recognition all over the country.
This dish of Alwar is so good to taste that a street in Alwar is named after it.
